Robin's Dolmates (stuffed grape leaves)

Made with ground bison and brown rice Made with ground bison and brown rice
Number of Servings: 25

Ingredients

    1.5 lb. ground bison
    3 cups uncooked long grain brown rice
    2 garlic cloves, crushed
    1 C chopped onion
    2 Tbsp. olive oil
    1 jar dolmas (grape leaves), approx. 50 per jar
    1 C lemon juice
    1 C fresh dill sprigs, chopped

Directions

-Unroll and rinse grape leaves.
-Steam grape leaves in water and lemon juice for 3-5 minutes.
-Drain grape leaves and allow to cool
-Saute onion, garlic, and rice until onion is translucent.
-Mix ground bison, rice mixture, and chopped dill in a large bowl.
-Place .5 tbsp. on each leaf and roll.
-Layer rolls in the bottom of a large pot.
-Add enough water to cover the rolls.
-Add 1/4 C lemon juice to the pot.
-Cook on medium for 45 minutes.

Makes 25 2-roll servings
