Easy Crock Pot Black Bean SoupSubmitted by: HOOTSKI
IntroductionMade this on the fly, making sure to add some interesting spices to ensure flavour. Made this on the fly, making sure to add some interesting spices to ensure flavour.
1 28oz can diced tomatoes, undrained
2 19oz cans black beans, drained and rinsed
2 1/2 cubes McCormick's Vegetable Bouillon
1 medium onion, chopped
3-4 garlic cloves, crushed
2 cups frozen green beans
2 tsp ground cumin
2 tsp ground ginger
2 tsp curry powder
Dump all veggies, beans, and spices in crock pot. Dissolve bouillon cubes in hot water. Add to pot. Add additional water until desired amount.
Cook on low for 6-8 hours.
Makes 8 two-cup servings, or 16 one-cup servings.

I used fresh black beans and vegetable broth instead of water. I did not use vegetable bouillon. I wanted to cut down on the sodium. - 5/6/09
