Kathie's Sandwich Bread

Introduction

Number of Servings: 12

Ingredients

    1 1/3 cups warm water
    3 tbsp unsalted butter, melted and cooled
    3 tbsp honey
    3-4 cups flour
    2 1/4 tsp yeast
    2 tsp salt

Directions

Makes 1 9" loaf or - 12 slices

1. Whisk the water, butter and honey in a bowl.
2. Combine 3 1/2 cups of the flour, yeast and salt in a mixing bowl.
3. Mixing at low speed add water mixture to the flour and mix until the dough comes together.
4. Knead the dough until it is smooth and elastic. If more flour is needed add 2 tbsp at a time.
5. Turn the dough out onto a lightly floured counter and knead by hand to form a smooth round ball.
6. Place dough in a large lightly oiled bowl and cover with plastic wrap. Let rise in a warm place until doubled in size : 1.5 hours.
7. Grease a 9x5 loaf pan.
8. Turn the dough out on floured ounter and gently press into a 9" square. Roll the dough into a tight log and pinch the seam closed. Place the loaf, seam side down into the pan. Cover loosely with plastic rap and let rise in a warm place: 1.5 hours
9. Preheat oven to 350 with rack in lower-middle position.
10. Bake until golden. 40-50 minutes.
11. Let cool 2 hours before serving.
