Chard & chickpeas

Introduction

This is a tasty mix of greens and beans to have over rice or pasta. Try it sprinkled with some aged cheddar! This is a tasty mix of greens and beans to have over rice or pasta. Try it sprinkled with some aged cheddar!
Number of Servings: 4

Ingredients

    1 onion
    3 garlic cloves
    1.5 Tbsp sesame oil
    1 cup chopped tomato
    2 cups chickpeas
    1/2 tsp salt
    1/2 tsp black pepper
    4 cups chopped chard
    1 tsp dried chilis (optional)

Directions

Saute chopped onion and chard stems in sesame oil over medium heat until onion is transluscent. Add tomatoes, chickpeas, salt, pepper, and chilis (if using). Let simmer for about 5 minutes. Cover with chopped chard, cover the pot with a lid and simmer for 3 or 4 minutes. Then sitr chard into the lower layer and simmer another 2 minutes.

Delicious on pasta or rice.

  • This was great. I used Rotel instead of the tomatoes and chilis, which gave it a nice kick. I would eat this every night, now that I've stopped eating meat. Thank you! - 7/20/10

  • I added a can of stock and some orzo before the tomatoes. Needed more seasoning in my opinion. But once I jazzed it up it was delicious! - 1/25/08
