Pan-Roasted Potatoes with Garlic & Onion

Delicious, quick, and savory! Delicious, quick, and savory!
Number of Servings: 12

Ingredients

    6 medium potatoes, washed & diced (leave peel)
    1T olive oil
    3-8 cloves fresh garlic, minced
    1/2 tsp ground ginger, or 3 1/2-inch slices fresh ginger
    1 1/2 tsp turmeric
    1 tsp salt
    1 tsp pepper
    1 c. raw onion, diced

Directions

Heat oil in large, nonstick skillet over medium-low heat. Add garlic, ginger, turmeric, and onion. Cook until onion is translucent.

Add potatoes, and shake pan (or use spoon) to coat potatoes with spices. Cook until potatoes turn golden brown, about 5 minutes.

Add water to cover the bottom of the skillet, cover pan, and cook, shaking pan occasionally, until potatoes are fork-tender, about 30 minutes.

Sprinkle potatoes with salt and pepper, and toss. Remove fresh ginger, if used.

Makes 12 1/2-cup servings.
