Ingredients

Couscous - Roasted Garlic and Olive Oil, as prepared, 2 cup
2 large Red Ripe Tomatoes, chopped
1 Cucumber (peeled & seeded) chopped
1 bunch Scallions, raw, chopped
1/4 cup red wine vinegar
Black Pepper
Salt (to taste)
Red Pepper Flakes (to taste)
Directions
cook couscous per package directions, let cool. prepare vegetables mix into couscous. Add red wine vinegar, pepper, salt and red pepper flakes. chill and serve.
