Turkey Chili

Ingredients

    1 T Olive oil
    1 pound ground turkey
    salt
    pepper
    2 t chili powder
    1 t ground cumin
    1 t ground oregano
    pinch of ground cinnamon
    1/2 c red onion, chopped (I used regular onion)
    3 cloves garlic, chopped
    2 carrots, diced
    1 14-oz can tomatoes in juice
    canned chipotle pepper in adobo sauce, seeded and chopped
    3 c water
    1 T cocoa powder
    2 14-15 oz. cans pinto beans, drained & rinsed
    1/2 cup chopped cilantro
    1/2 cup nonfat yogurt

Directions

1. Heat oil over medium heat. Add turkey, 1/2 t salt and 1/4 t pepper. Cook, stirring 3 minutes. Add chili powder, ground cumin (not seeded-couldn't get ground cumin to come up in the search), oregano and cinamon and cook, stirring 3 minutes.

2. Add onion, garlic & 1/2 t salt. Cover and cook until onion is wilting (5-7 minutes). Add a little water if onion or spices start sticking.

3. Add carrots, tomatoes, 1/2 can chipotle pepper in adobo sauce (this wasn't listed in ingredients because I couldn't get it to come up in search) , water and cocoa powder. Bring to a simmer, then reduce heat to low and cook partially covered 25 mintes. Stir in beans and cilantro, cook 15 more minutes.

Garnish with nonfat yogurt.
