Number of Servings: 4

Ingredients

    2 large potatoes, washed, but not peeled, diced
    1 large onion, diced
    1 large bell pepper, diced
    3/4 c ham, diced

Directions

Dice all ingredients, place in hot skillet (spray first with Pam). Cook until brown & crispy in places. Can cover for early part of the cooking, but finish uncovered. Add seasonings to taste, but it shouldn't need much salt!
