Cashew and Coconut Tofu Stir-Fry with Brown Rice

Ingredients

1 tsp. sesame oil
1 1-inch slice ginger, minced
1 clove garlic, minced
2 oz. firm tofu, cubed
1 1/2 cup stir fry veggies
1/3 cup light coconut milk
2 tbsp. cashews, chopped
½ cup cooked brown rice
Directions
Sauté ginger and garlic in oil for 1 min. Add tofu and sauté 8 min. turning once or twice. Add vegetables, coconut milk and cashews, cover and cook another 8 min. Serve over brown rice.
