Chicken, Potato and Rhubarb

Ingredients

    Water, tap, 2.25 cup
    Rhubarb, 1.75 cup, diced
    Onions, raw, 7 oz, chopped
    Pepper, black, .5 tsp
    Garlic, 3 cloves
    Lemon Juice, .25 cup
    Oregano, ground, 1 tsp
    Potato, raw, 2 large (3" to 4-1/4" dia.) (14 oz)
    Chicken Breast, no skin, 11 oz
    Italian Seasoning, 1 tsp
    cumin, dried, 1 tsp

Directions

In large pan, saute onions and garlic. Cube potatoes and cut chicken breast(s) into cubes. Add all ingredients, except rhubarb and 1/2 C of water and let simmer for 2 hours. Add rhubarb and 1/2 C of water during last half hour.

Can be served over rice.

  • This was not a good way to use rhubarb, way to tangy and the italian seasoning flavor kept coming back. Just was not a good combination for us. And with the serving size stated here you better be very hungy. - 6/9/09
