Ingredients

    1 cup apple sauce (no added sugar)
    1/2 cup honey
    2 eggs
    1/2 cup cottage cheese (low fat)
    1/4 cup lite sour cream
    2 cups SR wholemeal flour
    1 cup vanilla protein powder
    1/2 tsp ground coriander seed
    1/2 tsp ground cinnamon
    1/4 tsp ground nutmeg
    1/4 tsp ground ginger
    1/4 tsp ground alspice
    1/4 tsp poppy seeds
    pinch ground cloves
    2 tsp baking powder
    1/2 tsp salt
    11/2 cup grated carrots
    1 cup sultanas

Directions

Preheat oven 160C (315F)
Line the base of a slice tin (12" x 9" x 3")
In a bowl mix the apple sauce, sour cream, cottage cheese and honey
Add eggs, and beat well.

In a separate bowl, sift together the flour, baking powder, protein powder, spices and salt. Return the husks to the bowl.
Add the wet ingredients and mix well.
If the mixture is very dry add a little water to get a stiff dropping consistancy.
Stir in carrots and sultanas.
Empty mixture into slice tin,12" x 9" x 2", that has the base lined with baking paper.
Cook 160C (315F ) for 40min or until browned and firm to touch.
Cool before cutting.
