Tomato Rice Salad

Introduction

This salad is a variation of the Middle Eastern version of Tabouli. This salad is a variation of the Middle Eastern version of Tabouli.
Number of Servings: 4

Ingredients

    Brown Rice,cooked and cooled, 1 cup
    Red Ripe Tomatoes, 1 cup, dicd
    Sunflower Seeds, without salt, .33 cup, hulled
    Green Onions, 2 tbsp chopped
    Olive Oil, 2 tbsp
    Lemon juice, 3 tbsp
    Fresh Mint, chopped or 2/3 tsp dry mint
    Salt, .5 tsp
    Pepper, black, 4 dash

Directions

In medium bowl, combine rice, tomato, sunflower seeds, green onions, olive oil, lemon juice, mint, salt and pepper. Gently mix together.
Adjust the seasoning to taste.
