Banana Walnut Oatmeal Muffins

Introduction

Number of Servings: 18

Ingredients

    1/2 cup brown sugar (not packed)
    1/4 cup chopped walnuts
    1/2 teaspoon ground cinnamon
    1 teaspoon ground nutmeg
    1 cup quick cooking oats
    1 cup whole-wheat pastry flour
    1/3 cup wheat germ
    1 teaspoon baking soda
    1 teaspoon salt
    1/2 cup egg beaters (or 2 large eggs)
    1 cup apple butter
    1 teaspoon vanilla extract
    1/2 cup fatfree milk
    3/4 cup banana, mashed
    Optional:
    1/4 cup chocolate (or carob) chips

Directions

Preheat oven to 400 degrees Fahrenheit.
Place paper cups in a 12 capacity muffin pan. Whisk together the oatmeal, whole-wheat flour, brown sugar, wheat germ, baking soda, cinnamon, nutmeg and salt. In a separate bowl, whisk egg with milk and mashed banana to combine. Whisk in the applesauce and vanilla.
Stir in the flour mixture until just combined. Let sit for 5 minutes. Gently stir in the walnuts. (also add optional chocolate or carob chips at this time)
Pour the batter into the prepared muffin pan, be sure not to fill each tin to the top as the batter will rise and you don't want them to overspill. Bake for 16 minutes or until a wooden pick inserted in center of a muffin comes out clean.
Let cool on a wire rack for 15 minutes.
A second set of just 6 muffins will be needed.
Makes 18 muffins. (or just 9 jumbo, nutrition calculated for regular size muffins)
