Black Bean Salad

Number of Servings: 14

Ingredients

    1 Red Bell pepper, finely diced
    1 Yellow Bell pepper, finely diced
    1 Green Bell pepper, finely diced
    1/2 cup Red onion, finely diced
    1 can yellow corn, drained
    1 clove garlic, minced
    3 Tbl fresh cilantro, chopped
    1/4 cup olive oil
    1/4 cup red wine vinegar
    1 tsp lime juice
    1 can black beans, drained

Directions

Mix all ingredients except for beans. Add in beans, and toss gently to coat. Chill for 1 hr before serving.

Makes approximately 14 servings of 1/2 cup each.
