Low Carb Pumpkin Cheesecake Muffins

Introduction

Low Carb, Gluten Free, delicious for breakfast, snacks or desset! Low Carb, Gluten Free, delicious for breakfast, snacks or desset!
Number of Servings: 16

Ingredients

    1 pkg cream cheese
    1 small can pure pumpkin
    4 eggs
    2 tbsp ground flax seed
    1 tbsp brown sugar
    1 tsp stevia plus
    1 tbsp pumpkin pie spices
    1 tbsp cinnamon, ground
    1/2 tsp vanilla extract

Directions

Preheat oven to 375 degrees.
Mix softenened cream cheese, brown sugar, stevia and pumpkin until well mixed. Add spices, then mix well for several minutes.
Pour into greased muffins tins.
Bake for about 25 mins. Check for doneness.

    I changed it up because I could not for the life of me figure out how muffins could have NO FLOUR of any kind! They were actually quite delicious with the addition of 3/4 cup of soy flour and 3/4 cup of oat bran flour. I had to add more of the pumpkin than called for, and I used Splenda for baking - 10/15/07

    This was awful!! Please dont waste your ingredients on this mess. It came out more like a firm pudding... it was slimy and no amount of extra cooking time could fix it. Step away from this recipe and no one will get hurt!! - 9/11/07

    I'm not sure if I did something wrong, but these were mushy and custard-like, not muffin-like (or cheesecake-like) at all... NDelacourt, maybe you could help???? - 11/28/07

    They are supposed to be more like a cheesecake bite. I guess I shouldn't have called them a muffin. Sorry!

    I thought it was yummy, tasted like pumpkin pie. I added a tablespoon of baking powder and texture was good. - 9/11/12
