IntroductionPerfect for brunch or a light dinner. Perfect for brunch or a light dinner.
1 c egg beaters
1 c fat free half & half
.5 cup shredded part skim mozerella
1 tbs brummel and brown spread
1 cup portabella mushrooms
1 Oronoqui's frozen pie crust
In a pan, sautee mushrooms and scallion (chopped) in a tbs of butter. Add salt and pepper to taste. This is for about 8 minutes.
In a bowl, mix cup of cream and cup of egg beaters.
Spread half cheese in the bottom of the frozen crust. Mix mushrooms into eggs and pour ontop of crust. Top with 2nd half of cheese.
Bake for about 25 minutes until egg is set.
