Introduction

Ingredients

    • 12 low-fat vanilla wafers
    • 3 oz. cream cheese, at room temperature
    • 12 oz. fat-free cream cheese, at room temperature
    • 1/2 cup sugar
    • 1/2 teaspoon vanilla
    • 2 eggs
    • cherry pie filling

Directions

1. Preheat oven to 350° F. Line muffin tins with 12 foil cupcake papers. Place a vanilla wafer in the bottom of each cupcake paper.



2. In mixing bowl, beat cream cheese and fat-free cream cheese until smooth. Add sugar and vanilla and mix well. Add eggs and beat until smooth.



3. Pour cheesecake mixture into muffin tins. Bake for 20 minutes or until centers are almost set. Cool. Refrigerate 2 hours or overnight.



4. Decorate cheesecake tops with cherry pie filling.



Makes 12 cheesecakes/servings.

    I made mine with splenda 1/4 of a cup is only 184 calories. using 1 tbsp of frozen strawberries in syrup is only 35 calories per cake, rather than 60 for cherry pie filling. Saving 45 calories per serving. Making each serving only 85 calories. - 6/26/08

    This turned out very good. I used all Neufchatel instead of the regular and fat-free cream cheese that was suggested. And I used a no-sugar added natural strawberry spread instead of pie filling. It was so easy to make. - 9/29/08

    Since I have to watch my Carbs, I have a similar recipe that I got from an Adkin's cookbook, I replaced the cookies with finely chopped nuts (I usually use Almonds), replaced the sugar with splenda, and replace the pie filling with fresh or frozen fruit - 7/29/09

    Wow! My husband and son really loved it. I used defrosted strawberries that I froze fresh, and added some splenda. Just a personal preference. It would be good w/o anything.

    I've been doing this for years! My favorite addition is a little bit of freshly grated lemon peel just before baking. It makes them taste a little more like an old-fashioned New York style cheesecake....yummmm! - 10/19/09

    I've made these before/ tried to substitute just egg whites for the eggs. DON"T, it just does not work! Use the original recipe. It is fun to put different types of toppings on though (blueberries, strawberries, various types of sugar free pie fillings). These are great for parties. - 8/12/09

    I make a full cheesecake almost like this, so this was fun to make little versions. The cholesterol was a little high, so I just used all fat free cream cheese. Delicious. I had to take the rest to work, so I didn't eat them all.. - 6/26/09

    made theswe today made some changes used splenda instead of sugar, fresh cherries rather then canned pei mix, and a thin waffel for the crust This cut the calories a bit an IO need to cut out every one I can If the surgar is replaced by splenda it is an ideal treat for diabetics

    Great replacement for my sometime cheesecake cravings. While I know that some purists cringe at ingredient substitutions, I chose to replace the non-fat cream cheese with Neufchâtel. For whatever the reason, I instantly gag with the non-fat version and decided to take a hit with the increase of fat. - 8/12/09

    I have been making these for years but you can cut the calories a lot by useing splenda and low fat vanilla cookies and useing all the lower calorie cream cheese, fresh blueberries or frozen sugar free strawberries these are a great dessert.(great to take to a party) - 8/12/09

    Yummy! These were super easy to make and as good as any other cheesecake. I sliced some strawberries and mixed with splenda for the tops. Since other seem to have used splenda with no problems I will try next time around. - 6/23/09

    Careful about recalculating the calories by subtracting the cherry pie filling. When I checked the nutritional breakdown by ingredient, it didn't list the cherry pie filling. I don't think it was included in the 120 calories. - 8/19/13

    This is a great recipe and provides another way to put vanilla wafers to good use. I made my batch of mini cheesecakes with lowfat cream cheese and substituted blueberry pie filling in place of cherry.
