1 tbsp olive oil
6 cloves garlic, minced
1/4 cup fresh parsley, minced
1 can Del Monte No Salt Added Tomatoes
1 tbsp fresh basil or 1 tsp dried basil
1 tbsp fresh oregano leaves, crushed or 1 tsp dried oregano
1/4 tsp salt (optional - not included in nutritional info - I left it out to lower sodium)
ground red pepper or cayenne to taste (I use between 1/8 tsp and 1/4 tsp)
box of Dreamfields Penne Rigate Pasta
3 lbs cooked chicken breast, diced
Season chicken with black pepper if desired. Bake in oven at 425 for 28-30 mins.
When pasta is nearly finished, heat olive oil. Saute garlic and parsley until golden.
Add tomatoes, mushrooms, red peppers, oregano and basil
Cook uncovered 15 mins.
Add chicken and simmer for 15 mins to blend flavors.
Mix with pasta.
Serve topped with freshly grated Parmesan (not included in nutritional info)
