Quinoa Pilaf

Introduction

Okay, it's not really a pilaf...but it's still delish. This is an "I need to clean out my fridge" kind of meal. I love serving this with Vegan Parmesan over the top. You can increase or decrease the seasonings any way that you like. Okay, it's not really a pilaf...but it's still delish. This is an "I need to clean out my fridge" kind of meal. Number of Servings: 4

Ingredients

    1 cup quinoa, rinsed with cold water
    1 1/4 cups of vegetable broth
    8 oz sliced mushrooms
    1 cup frozen peas
    Tobasco (just a dash for heat)
    3 tbsp poultry seasoning
    Pam

Directions

Heat a large skillet over medium-high heat. Spray with Pam and add the musrooms. Cook until they've started to release their water. Add the tofu and saute' until it starts to brown. Season with Tobasco and poultry seasoning. Saute' 2-3 minutes more. Add the quinoa, peas and broth. Bring to a boil and then cover and simmer for 12 minutes. Take off the heat and let sit for 5 minutes. Fluff with fork and spoon into large bowls. Top with Vegan Parmesan cheeze and dig in! Makes 4 servings.
