Sourdough pancakes (Alaskan style)

Introduction

This is an old Alaskan recipe. Starter is not included, but if you need one,,,cheater starter: 1T yeast , 2T sugar, add 1/4 C lukewarm water until dissolved. This is an old Alaskan recipe. Ingredients

    Starter
    1 1/2 C lukewarm water
    1/2 tsp salt
    1/2 C sugar
    2 C flour
    ------
    1 egg
    1/2 tsp baking soda

Directions

This recipe makes 24 small 3-4 inch pancakes. Serving size is 4 pancakes, so it makes 6 servings. If you make larger pancakes, adjust the serving size.

The night before you plan to have pancakes ass the starter, lukewarm water, salt, sugar, and flour. Let set in warm place overnight. In the morning, take out 1/2 C dough to set aside (see note following recipe) and pour rest into a mixing bowl. Add egg and soda. Bake as other pancakes on greased griddle until golden brown.

Note: Put the 1/2 C dough (also called sponge) into sourdough pot (a covered glass or pottery container) to keep as a starter. Store at room temperature. To keep fresh, use every 2-4 days. May be kept slightly longer in refrigerator. If starter is over a week old, begin a new starter. Starter may be used for breads, cakes, muffins, waffles, as well as pancakes.
