Smoked Haddock Scotch Egg

Ingredients

    3 hard-boiled free-range eggs
    potato, 400g boiled and mashed
    4 tbsp breadcrumbs
    1 tablespoon of lurpak lighter
    1 small skinned fillet of smoked haddock
    bayleaf for steaming
    parsley, fresh, chopped, 2 tbsp
    2 tbsp oil for brushing

Directions

Gently steam the smoked haddock, using the bayleaf for flavour. Flake the fish, discarding any bones.

Blend the potato, parsley, and lurpak then add the
smoked haddock flakes. Shape into six equal patties and cover each hard-boiled egg evenly.

Now roll the rounds in breadcrumbs.

Brush very lightly with the oil and bake in oven on high temp until golden brown in colour.
