Jicama Salad

Introduction

This is a very easy and refreshing summer salad with a Mexican flavor. For a little more spice you could add a little chopped chile. This is a very easy and refreshing summer salad with a Mexican flavor. For a little more spice you could add a little chopped chile.
Number of Servings: 4

Ingredients

    1 small jicama (app. 1 lb)
    2 medium tomatoes, diced
    1/2 medium onion, diced
    2 tbsp chopped cilantro
    1/2-2 squeezed limes
    1/4 tsp salt
    1/4 tsp ground black pepper
    chopped green chile (optional)

Directions

Chop jicama, tomato, onion and cilantro and toss in large bowl. Add salt and pepper, toss then add lime juice. I personally don't like salt so I normally use less than I have listed. Use to taste. Makes 4 servings.
