Herb Mayonnaise

Introduction

homemade mayonnaise. use a 1/4 cup of whatever fresh herbs you have on hand homemade mayonnaise. use a 1/4 cup of whatever fresh herbs you have on hand

Ingredients

    1 c olive oil
    1 egg (room temperature)
    1 egg yolk (room temperature)
    1 tbsp whey (for a preservative if you have it)
    1.5 tbsp lemon juice
    1 tsp dijon or other grainy mustard
    1/4 fresh herbs

Directions

mix whey, lemon juice, mustard, egg, and egg yolk in food processor. gradually add in olive oil. add fresh herbs at the end.

this mayo has a thinner consistency than the store bought stuff, but it may slightly thicken in the fridge.

great for chicken salad! the fresh herbs and the olive oil base give it a light flavor.
