Crockpot Pineapple Chicken

Introduction

This sweet and tangy chicken simmers in the crockpot all day allowing the flavors to blend. I like to serve it over brown rice with a side of steamed broccoli or a green salad. Number of Servings: 8

Ingredients

    3 lbs. boneless skinless chicken breasts
    1 (20 oz) can crushed pineapple, unsweetened
    1/2 c. Splenda brown sugar blend
    1/4 c. honey
    1/3 c. lemon juice
    2 T. honey mustard
    1 T. soy sauce
    1 T. cornstarch

Directions

Place chicken breasts in slow cooker. Combine rest of ingredients except cornstarch and pour over chicken. Cover and cook on low for 4-6 hours or until chicken is no longer ink. Mix cornstarch with a little cold water and add to slow cooker 30 min. before serving to allow the sauce to thicken.

8 servings (4 oz. chicken + about 1/2 c. sauce)

Note: The chicken is a little more esthetically pleasing if you brown it in a skillet before putting it in the crockpot ~ but I am lazy and don't usually take the time to do this! :-)
