Introduction

Number of Servings: 14

Ingredients

    3 cups dry red lentils
    2 cans lentil soup
    1 can chickpeas
    1 can peas
    1 can (12.5 oz) aloo mattar (indian curry with potatoes and peas in medium sauce)
    2 cups vegetable broth
    1 medium tomato chopped
    1/2 green pepper chopped
    1/4 cup onion chopped
    4 mushrooms sliced
    1/4 cup cilantro
    1/4 cup bragg's soy alternative
    1 tbsp balsamic vinegar
    2 tbsp freeze dried red jalapeno pepper
    salt and black pepper to taste


Directions

this makes a huge amount of food. if need be, based on the size of your crock pot, the size of your fridge/freezer, and the size of your appetite, feel free to cut it down!
mix all ingredients in the crock pot. set to high for 3 hours, then low for 1 more hour.
makes 14 servings (about 1 cup per serving)

  • I'm going to try w/ low sod soy sauce instead of Bragg's, 1 fresh jalapeno, frozen peas, & instead of canned aloo mattar, 1 chopped potato w/ an addt'l 1/4 cup of peas w/ some garam marsala & curry powder should replicate some of the flavor. I'm still looking for a lentil soup alt. - 3/28/08
