Chicken Tortilla Soup

Introduction

Very simple soup with a nice, smokey flavor. Very simple soup with a nice, smokey flavor.
Number of Servings: 6

Ingredients

    1 pound boneless, skinless chicken breast cut into pieces
    1 tbsp olive oil
    1 cup onion, chopped
    3 cloves garlic, minced
    1/2 jalapeno pepper, seeded and diced
    1 tbsp chili powder
    1 tsp ground cumin
    4 roma tomatoes, seeded and chopped
    8 cups low sodium chicken stock
    1 chipotle en adobo, seeded and chopped
    4 ounces baked, low fat tortilla chips, crumbled

Directions

Heat oil in a heavy stock pot over medium high heat. Add onion and saute until soft. Add garlic and jalapeno, saute 2 minutes more. Add tomato, chili powder and cumin and saute until spices are very fragrant. Add stock and chipotle to pot and stir well. Bring to a boil, reduce heat and simmer, covered, for about 30 minutes. Add tortilla chips and serve.

Serves 6.

Great toppings include 2% mexican blend cheese, avocado, low-fat sour cream ... just remember to put any additions in your tracker!
