Peanut Butter Blondies

Ingredients

    cooking spray
    1 c. packed brown sugar
    6 tbsp unsalted butter
    1/2 c. sweet potato baby food
    1/2 c. carrot baby food
    3/4 c. creamy peanut butter
    2 tsp. vanilla extract
    2 large eggs
    1/2 tsp. salt
    3/4 c. quick oats
    1 c. all-purpose flour
    4 tbsp pwdered sugar

Directions

Preheat oven to 325 F. Spray bottom only of 9x13 pan. Melt butter and brown sugar in saucepan, cool a bit. Whisk in baby food, PB, vanilla, eggs and salt. Add oats and flour and mix until just combined. Pour into baking pan and bake for 30-33 min. Cool completely and dust with powdered sugar. Makes 24 servings.
