Healthy Chicken and Pasta

Ingredients

    8 oz fresh pasta shells or 6 oz dry pasta shells
    1-1/4 lbs. fresh spinach (I use baby spinach)
    1 lb. chicken breast - boned, skinned, cut in 1 inch pieces
    4 medium cloves garlic, chopped fine
    1 tsp. olive oil or vegatable spray
    1 cup chicken broth
    1/2 tsp. nutmeg
    salt and pepper
    1/2 cup Parmesan, grated (I use already grated found in the cheese section)

Directions

Cook the spinach in the broth until tender. Drain and reserve broth. Mash out excess liquid.

Cook pasta.

Preheat a saute pan or heavy skillet over medium heat, add the oil or vegetable spray and saute the garlic, stirring constantly, until it is white. Dont allow it to brown. Add the spinach and nutmeg, salt and pepper.

Add the chicken pieces to the spinach, stir and turn and add a small amount of the reserved cooking broth. Stir and turn the spinach until it is hot, adding broth as necessary.

Add the cooked, drain pasta to the spinach mixture and blend well.

Serve immediately with Parmesan.

  • This was a greatd base but I'm one of those "throw everything in" cooks. I browned the chicken with the garlic and some chopped onion. I then added the spinach, a can of italian-style diced tomatoes and feta cheese. I used the juice from the tomatoes instead of broth. It came out wonderfully :) - 11/7/08
