Pork lentils, rice and tomatoes

Introduction

I needed dinner and found the ingredients on hand. Decided it sounded like dinner. I needed dinner and found the ingredients on hand. Decided it sounded like dinner.
Number of Servings: 3

Ingredients

    8 oz Pork sirloin
    1 can diced tomatoes, no salt added
    1/2 cup dry lentils
    3/4 cup dry brown rice
    1 tsp chili powder
    1/4 cup flour
    1 tsp thyme

Directions

Get the brown rice cooking per instructions.

Prep the Pork by removing all visible fat, and dicing into bite sized hunks. In a bag mix the flour, chili powder, and thyme. Add the chopped pork, coating well. Spray a non stick pan and warm it up. Add the pork, tossing it often to cook well. Add the lentils, tomatoes and about 1 1/2 cups water. Bring to a boil. Reduce heat, cover and simmer about 20 minutes, or until lentils are tender. Remove the cover.
When the rice is done, add it to the pork, lentil and tomatoes. Stir well and cook uncovered for about 5 minutes or until desired consistancy.
Serves 3
