Zucchini Mozzerella

Introduction

We have this as the main meal with Italian bread and butter, and tossed salad. It also makes a great side dish. Ofcourse, you can always add any leftover chicken, pepperoni, or sausage you have on hand too! We have this as the main meal with Italian bread and butter, and tossed salad. Number of Servings: 4

Ingredients

    1/2 med onion (1 Cup diced)
    1 Small Green pepper (1 Cup diced)
    3 Small Zucchini (4 cups sliced)
    2 Small Summer Squash (2 cups sliced)
    1/2 Jar Ragu* Spaghetti Sauce (Any flavor of choice)
    8 oz. Mozzerella Shredded (or whatever shredded cheese you have on hand)

Directions

4 1-cup servings (Main Course)
In large dutch oven saute onions and peppers on med low for about 15 minutes or to your liking of doneness. (We like ours a bit crunchy). Add zucchini and squash and a little water, bring water to a boil, reduce heat to simmer and cook about 30 minutes til zucchini is tender.
Add Ragu and cheese. Simmer for 15 minutes.
(If casserole seems to watery, just simmer until desired consistancy is reached.)
