Introduction

I'd recommend using shredded Pepper jack cheese or monterrey jack rather than what I used. You'll find that it disperses throughout the bread better. Ingredients

    I cup each: Yellow cornmeal & flour
    1 cup nonfat milk
    1 large egg
    1 tbsp. Baking powder
    1/2 tsp. salt
    1/4 cup margarine
    1 medium green pepper cut into strips
    4 oz. Velveeta pepper jack cheese

Directions

PREHEAT oven to 425°F. Mix cornmeal, flour, baking powder and salt in large bowl; stir in cheese. Beat egg lightly in medium bowl with wire whisk. Add milk and butter; beat until well blended. Add to cornmeal mixture; mix just until moistened.
POUR into greased 9-inch round cake pan. Top with pepper rings.
BAKE 20 to 25 min. or until golden brown.

Slice 4 times for 8 pieces.
