Shrimp & Barley Soup

Ingredients

    1/2 cup chopped green onion
    3 tsp pureed or minced garlic
    1 bay leaf
    1/4 tsp thyme
    1/8 tsp cayenne pepper
    4 cups reduced sodium chicken broth
    1/3 cup pearl barley
    340 grams of cooked, peeled, de-veined shrimp

Directions

Throw everything (except barley and shrimp) into a pot. Bring to a boil. Add barley and cover. Cook over med-low heat for 45 minutes, making sure barley is cooked through.
Add shrimp and serve.
