Beans and Rice

Ingredients

    1 tbsp canola oil
    3 garlic cloves, pressed
    1/2 cup chopped onion
    1/2 cup chopped green pepper
    1 can petite diced tomatoes
    2 cups small red or black beans
    1 tsp Zataran's Creole Seasoning
    1 tsp thyme
    1 tbsp packed brown sugar
    2 cups cooked rice, white or brown

Directions

Sautee garlic in canola oil until aromatic. Add onion and green pepper and sautee until soft. Add beans and tomatoes, then sugar and seasonings. Cover and simmer for 20 minutes, or while rice is cooking. You can add sausage, chicken, or shrimp if desired.
