4 5oz. cans of Chicken of the sea boneless skinless salmon drained
1 med red bell pepper chopped
1/2 cup chopped onion
1/2 cup celery
2 T. capers
1 cup bread crumbs
2 large eggs
1/4 cup mayonaise
2 tsp dijon mustard
2 T. olive oil
Heat remaining 1 T. oil in skillet , shape salmon mixture into 8 patties, fry until golden brown and firm about 7 minutes each side.

My fiance was used to breaded fat that his mom used to make. I cook completely different than her very healthy. I had never made salmon patties so I was a little nervous he wouldn't like them. He LOVED them, he said he didn't even miss the thick breading around them. used 16 oz fresh salmon - 5/13/11
