Chicken & Grapefruit Salad

Introduction

A salad that is a meal. Very satisfying and nice brunch entree. A salad that is a meal. Very satisfying and nice brunch entree.
Number of Servings: 3

Ingredients

    1/2 Rotissorie chicken - skin & bones removed.
    10 Baby Carrots
    1/2 Green pepper sliced & cut into bite size bits
    1 White grapefruit peeled & membrane/seeds removed
    1 Cucumber peeled & cut into bitesize pieces
    1 head or 1 pkg premixed leaf lettuce
    4 Tbls. Briannas Homestyle Poppy Seed Dressing (or you can substitute low fat brand)

Directions

Add salad, vegetables and grapefruit (broken into bite size pieces) to a large bowl. Take meat off of chicken carcass and hand pull into shreds and chunks. Add dressing and thoroughly toss to coat all greens evenly. Serve in meal size portions with Wasa crisps, crackers or crisp sourdough bread.
