Introduction

This recipe is from a box of Heartland 100% Whole Wheat Rotini. I needed to adjust the ingredients to adapt to SP food list, as well as my taste. I used red peppers instead of pepperoncini for more vitamins and my preferred taste. The serving size is 2 cups This recipe is from a box of Heartland 100% Whole Wheat Rotini. Ingredients

    13.25 oz. box of Heartland Whole Wheat Rotini
    Olive Oil, 3 tbsp
    Garlic, 4 cloves
    Onions, raw, 1 medium (2-1/2" dia)
    Zucchini, 2 cup, diced
    Peppers, sweet, red, raw, diced, 1 cup
    Chili powder, 2 tbsp
    *Tomatoes, red, ripe, canned, with green chilies, 1.5 cup
    Black Olives, 6 jumbo chopped
    Romano Cheese, 1 oz Optional but I did include it in the calculations.

Directions

Cook the Rotini according to package directions. Meanwhile, in a large skillet, heat oil over medium heat. Satue' garlic and onions. Add zucchini and peppers, cook 5 minutes or until vegetables are tender-crisp, stirring occasionally. Add the child powder, tomatoes with diced chilies and olives, and bring to a boil. Reduce heat to low. Simmer uncovered 10 minutes , stirring frequently, until mixture thickens. Add Rotini to vegetables. Mix well. Sprinkle with Roman Cheese (if desired) Serve immediately.
Makes a generous 7 servings of 2 cups each.
