Chickpea & Mushroom Pasta

This is a quick and tasty dinner or lunch. It's so simple to make, it's a great recipe for anyone with limited time. This is a quick and tasty dinner or lunch. It's so simple to make, it's a great recipe for anyone with limited time.

Ingredients

    1tbsp olive oil
    1 cup canned chickpeas
    1 cup mushrooms
    1/2 cup raw onion
    3 cloves of garlic (optional)
    1 package (454 grams) of whole wheat spaghetti
    1 cup of crushed tomatos
    1tsp cumin seeds
    1tsp salt

Directions

makes 8- 1 cup servings

Heat olive oil in sauce pan. Throw in the onions and sautee for 3 minutes untill soft. Throw in the mushrooms, cumin, garlic, and salt and sautee for another 3 minutes. Add in the rest of the ingredients (except the pasta), and simmer on a low flame for 4 minutes. As you are doing this, place the wholw wheat spaghetti into a pot of bioling water for 8-10 minutes. When the spaghetti is cooked, drain and place in a large dish and pour the chickpea & mushroom sauce over the pasta.
