Chicken with shrimp and Avacado Salsa

Introduction

You can sub in pork loin chops,or chicken breasts (and leave out the shrimp) either way the salsa topping is extremly Yummy and great with all three sources of high protein. Number of Servings: 6

Ingredients

    1 lb Chicken (boneless and skinless)
    18 oz Shrimp (peeled and deveined)
    1 tbsp cumin
    1/2 tsp salt
    1/4 tsp ground black pepper
    2 cloves of garlic, minced
    2 tbsp extra virgin olive oil
    1 94oz0 can tomatillo salsa or 1/2 cup salsa verde
    1 scallion, coarsley chopped
    1 ripe avocado
    1/4 cup chopped radishes
    1tbsp chopped cilantro


Directions

1. trim any fat, rinse and pat meat choice dry. Combine cumin, 1/4 tsp salt, pepper and garlic rub mixture all over meat.
2. In large skillet, heat oil over medium-high heat. Add meat and cook until juices run clear add shrimp and cook until opaque.
3. In food processor, blend salsa, scallions and 1/4 tsp of salt until smooth. Transfer to a bowl and stir in avacado, radishes and fresh cilantro.
4. Serve with the salsa mix on top and enjoy.
