Pineapple Grilled ChickenSubmitted by: SELAHTERRY
4 chicken breast halves without skin
1 cup pineapple juice
2/3 cup sherry
2 Tbs brown sugar
1 Tbs rosemary, fresh and chopped
1 clove garlic, minced
1 Tbs Oil
1 cup onion, chopped
1 cup mushroom, chopped
1 cup pineapple, chopped
4 ounces Monterey Jack cheese, grated
Saute onion and mushrooms in oil until they are soft, but not browned.
Remove chicken from marinade and grill 4 minutes on each side.
When chicken is finished cooking, put in a baking dish, top with onion, mushroom and pineapple. Cover with cheese and put under the broiler till melted.
