3 slices bacon, cooked and chopped
2 eggs, lightly beaten
1/2 cup grated Edam Cheese
1/4 cup Calcitrim milk
1 tbsp each of fresh chives and parsley, chopped
salt and black pepper
6 wholegrain bread slices with crusts removed
Whisk eggs, s&p and milk together.
Add in bacon and stir together. Add in fresh chopped parsley and chives too.
In a non-stick 6 muffin tin, place in 1 bread slice in each. Pour in the egg, cheese and bacon mixture.
Bake in a pre-heated oven on 200C until golden brown and egg mixture has set.
Cool a little then eat. Very tasty!
