Ingredients

2 boneless, skinless chicken breast halves
1/2 tbsp olive oil, extra virgin
1/2 tbsp butter
1 clove minced garlic
1/4 cup diced onions
1tbsp rosemary, fresh or dried
1/4 cup dry white wine
1 cup diced tomatoes
Directions
Heat a skillet to medium-high. Add olive oil & chicken and cook, turning frequently, until done. Remove from pan and set aside- keep warm. Add butter to pan. When melted, add onions, garlic & rosemary, and saute until onions are translucent. Add wine & tomatoes to pan. Bring to a boil. Reduce heat and simmer until liquid is reduced by half. Arrange chicken on plates. Spoon sauce over chicken and serve.
