Introduction

This was a favourite lunchtime dish for my daughters when they were growing up.The 2 Minute Maggi Noodles had just come to India and thanks to aggresive advertising the girls would INSIST on having it for Lunch or Dinner often.So I found out a way to ease my conscience about Nutrition and also fulfill their wish. Ingredients

    200gms.Maggi 2 minute Noodle Pack(any Flavour)
    200gms.skinned raw boneless Chicken Breast sliced in thin strips

    400gms.thinly sliced Mixed Vegetables (Cabbage,Carrots,Frenchbeans,Leek,and Celery)
    100gms.Shallots(Red Onions) sliced thin lengthwise
    2tomatoes sliced lengthwise
    4 Bouillon Stock Cubes
    1Jumbo Egg
    7-8flakes Garlic chopped fine
    5hot red Chillies sliced fine
    1.5tsps.Brown Cane Sugar
    2tbsps.Malt Vinegar
    1.5tbsps.Soya Sauce
    1tbsp. Brown n Polson Corn Flour
    OR
    1tbsp. Arrowroot Powder



Directions

PREPARATION
Crumble the Bouillon Cubes along with Taste Maker Packet.Break the Noodles into smaller pieces.Wash and slice Chicken Breast into thin strips.Marinate with 1tsp.Soya Sauce and 1tsp.Vinegar and set aside.Beat the Egg with a pinch of Black Pepper Powder and set aside.Mix together the remaining Soya Sauce and Vinegar with the Corn Flour Powder and sugar to a paste and keep ready.
METHOD
Heat Oil in a wok.Add finely chopped Garlic Flakes and sliced Red Chillies.Saute for 1minute and lower flame.Pour in beaten Egg and stir into thin strips with a fork.Add sliced Tomatoes and Shallots and saute till transclucent and soft.Add sliced mixed Vegetables and saute for 2 minutes more.Now add the Chicken strips and the Corn Flour Paste.Stir well till the paste coats all the Ingredients.Saute on low flame till almost cooked.Pour in 2 cups of Water, the crumbled Bouillon Cubes and Maggi Taste Maker mix.When Water boils add the broken Noodles and cook for 2 minutes till Noodles are done.The Sauces and Corn Flour Paste gives it a thick coat of gravy like Sauce.Serve hot in individual bowls.
Makes 4 generous helpings.
