Tomato Avocado Salsa

Number of Servings: 8


    * 1 teaspoon lime zest
    * 2 tablespoons lime juice
    * 3 plum tomatoes, seeded and diced
    * 1/3 cup onion, chopped
    * 1/4 cup cilantro, chopped
    * 1 garlic clove, minced
    * 1/8 teaspoon salt
    * 1/8 teaspoon pepper
    * 1 avocado, peeled, seeded and diced


Combine all ingredients in a bowl.
Toss well and chill.

    For more of a "dip" feel, give it a couple of rounds in a food processor. (might want to leave out some of the tomatoes and add them back in later) - 2/9/10

  • This is a simple, fresh-tasting recipe. I like the addition of lime zest (I used lemon). It's good with or without cilantro. - 2/10/10
