Introduction

Ingredients

    1 onion, halved then sliced thin (I used vidalia)
    1/4 cup vegetable broth
    1 bunch kale (de-stemmed and finely chopped)
    2 cans tomatoes (no salt added)
    1/2 cup kalamata or other olices
    1 tablespoon fresh parsley
    8 oz whole wheat pasta
    1/4 cup parmesan cheese (the fitness trainer recommended vegan parmesan OR nutritional yeast. I used parmesan in the recipe calculator)

Directions

Cook pasta and drain. Meanwhile, sautee onion in broth, add kale and tomatoes. Bring to a boil and simmer for 20 minutes. Add olives and parsley, cook for 5 minutes more. Mix with pasta. Makes ~6 servings of approx. 1 1/2 cups each.
