Potato & Cucumber Salad

Introduction

Number of Servings: 4

Ingredients

    * *Potato, raw, 4 small (1-3/4" to 2-1/2" dia.)
    * Cucumber (peeled), 1 cucumber (8-1/4")
    * Sour Cream, reduced fat, 1/2cup
    * Mustard seed, yellow, 1/8 tsp
    * *Coriander seed,1/4 tsp
    * *Cumin seed, 1/2 tsp
    * Onions, raw, 1 tbsp finely minced
    * Cilantro, raw, 1 tbsp minced

Directions

Scrub potatoes, place in pot and cover with water. Cover pot and boil potatoes until tender - about 18 minutes.
Peel and cube cucumber.
Combine remaining ingredients.
When potatoes are done, drain, cut into cubes and add cucumbers and potatoes to dressing.
Toss to coat.
Additional cilantro may be placed on top for decoration.
