Packed Oatmeal Cookies

Introduction

A very fruity and nutty version of an old fashioned oatmeal cookie favorite. This could probably be made even lower cal if you use the Splenda Brown Sugar, but I didn't have any on hand to give it test run. Ingredients

    1 C butter flavored Crisco shortening
    6T Skim Milk, 2%
    1/2 C packed Splenda Brown Sugar blend
    1/2 C Splenda
    2 Eggs
    1t Vanilla
    1C Unbleached all purpose flour
    1/2 C Whole Wheat Flour
    1t Baking Soda
    1t Cinnamon
    1/2 t Cardamom
    1/2 t Salt
    3 C Old Fashioned Quaker Oatmeal
    1/2 C chopped pecans
    1/4 C raisins
    1/4 C dried cherries
    1/4 C dried apricots (cut to rasin sized pieces)

Directions

Preheat oven to 350 degrees
In medium bowl whisk together the flours, spices, and salt
In another medium bow mix together the granola, oatmeal, and fruits and nuts.
In a large bowl, mix the crisco, milk,and sugars - beat with an electric hand mixer till light and fluffy. Add the eggs and the vanilla and mix well.
Add the flour mix a bit at a time until it's incorporated into a dough.
Put your hand mixer away.
With a wooden spoon mix in the granola, oats, fruit and nuts until the dough looks like the oats are evenly distributed throughout.

I use a 1/4 cup ice cream scoop to portion out the cookies, which makes them a bit big, but in my family that's the only way to go. If you use that tool, the cookies will fit about 10 to a full sized baking sheet (they don't spread much) and bake in about 20 minutes and the recipe will yeild about 31 cookies between 2 and 3 inches in diameter.
