Deb's Broccoli Salad

Introduction

Ingredients

    8 cups fresh broccoli, roughly chopped
    1 cup red onion, chopped
    2/3 cup dried sweetened cranberries
    1/2 cup walnuts, chopped
    2 Tbsp. Bacon Bits
    4 Tbsp. Light mayonnaise
    1/2 c. Fat Free cottage cheese
    1/4 c. Fat Free half and half
    2 t. mustard
    2 Tbsp. balsamic vinegar
    1 Tbsp. granulated sugar
    1 Tbsp. Splenda

Directions

Combine broccoli, onions, walnuts, cranberries and bacon bits.

In small bowl, combine remaining ingredients. Puree with a stick blender until smooth (our put all ingredients in a regular blender and liquify). Pour this dressing over the vegetables. Toss to coat.

Makes 4 huge servings (approx 2 cups each)
