Spaghetti Squash Mix

Introduction

Wonderful side dish with halibut Wonderful side dish with halibut
Number of Servings: 5

Ingredients

    2 cups cooked spaghetti squash


    1 cup chopped red peppers


    2 cups sliced fresh mushrooms


    15-20 cooked med asparagus spears-cut into 3rds



    2 tbsp of olive oil


    4 tbsp Land O Lakes light butter


    2 tsp of dried basil



    good shake of lemon pepper seasoning

Directions

The asparagus and spaghetti squash were cooked for other meals.

1. Heat olive oil and light butter in skillet over medium heat.


2. Add mushrooms and red peppers. Saute 5 minutes.

3. Add asparagus and squash. Heat through.

4. Add Basil and Lemon Pepper seasoning. Toss and serve.
