Salmon Spinach Thingamebob

Number of Servings: 2

Ingredients

    1 tsp olive oil
    2 Italian tomatoes, diced
    2 spring onions, thinly sliced
    1 clove garlic. crushed (to taste)
    80g baby spinach leaves
    210g can low salt salmon in water, drained, bones removed and flaked
    2 tsp lemon or lime juice
    2 Tbs grated parmesan cheese
    200g sweet potato, peeled, diced and steamed

Directions

Spray a non stick frying pan with olive oil spray.
Add onion and cook gently until softened 3 - 4 mln
Add tomato and garlic to onion in pan.
Cook, stirring often for 2 mins until heated through and tomato softens slightly
Add spinach and salmon. Stir gently
Stir in lemon juice and season with black pepper
Add cooked sweet potato and heat gently, stirring, until heated through
Serve onto plates
Sprinkle with parmesan cheese
Serves 2
