Introduction

a delicious salad made with black beans and veggies a delicious salad made with black beans and veggies
Number of Servings: 8

Ingredients

    2 cans black beans
    2 cups defrosted frozen corn
    1/2 cup chopped red onion
    1/4 cup chopped scallions
    1/2 jalapeno pepper seeded and finely chopped
    1 cup cherry tomatoes quartered
    2 tbsp. freshly chopped cilantro
    1 lemon juiced
    1 tbsp. olive oil
    1/2 cup chopped green bell peppers
    2 tsp. tabasco sauce
    salt and pepper to taste

Directions

Place all ingredients into a bowl and stir.Add more hot sauce if you like it hot.I like to add chopped boneless skinless chicken breast in the summer for a quick cold salad on a hot day!Also great for a potluck or BBQ.

Makes about 8 1 cup servings

  • I used lime instead of lemon, and chili powder since I didn't have jalapeno, and it was delicious. I also used fresh corn, which I think made a lot of difference, using half of it raw and half I sauteed in a pinch of olive oil with some chopped garlic. - 9/9/07
